Ingredients for cheese cake
    For the base
  • 150 grams Plain biscuit
  • 80 grams Butter (approximately)
  • For cream cheese
  • 1 Full cream fresh milk
  • 4 tablespoons Lime juice
  • For the whipping cream
  • 100 grams Whipping cream powder
  • 100 milliliters Water (cool)
  • For cheese cake
  • 15 grams Gelatin
  • 2 Condensed milk
  • 50 milliliters Water (room temperature)
  • Vanilla essence
  • 280 Cream cheese (prepared above)
  • 50 grams Icing sugar (sifted)
  • Whipping cream (prepared above)
  • 50 grams Powdered sugar
Method
    1. Prepare cream cheese
  1. Put 1L of full cream fresh milk into a pot and heat it to approximately 80C then turn off the flame.

  2. Add 4 tbsp of lime juice and mix, then keep aside for 5 minutes. 

  3. Then strain the mixture using a tea strainer/cheesecloth.

  4. Then put it into a bowl and beat using a electric mixer until it gets creamy texture(if needed add some milk water), now our cream cheese is ready so put it into the fridge until we prepare the other ingredients. 

  5. 2. Prepare the base
  6. Melt butter using double boiling method.

  7. Put biscuits into a zip lock bag and crush using a rolling pin.

  8. Add melted butter into crushed biscuits and mix until it can make a ball.

  9. Apply some butter in cheese cake tray and put the biscuit mixture on it, then even and press the mixture from a bottom of a cup.

  10. Put it into the fridge.

  11. 3. Prepare the whipping cream
  12. Add whipping cream powder to a bowl and add cool water into it.

  13. Beat it using a electric mixer on low speed for few minutes until it whipped 3/4, keep this aside. 

  14. 4. Prepare the cheese cake mixture
  15. Put condensed milk and water into a cup and mix it, add gelatin into it, then double boil this mixture until gelatin dissolve completely keep this aside until the mixture gets cool for about 35C.

  16. Now get 3/4 whipped whipping cream and add powdered sugar into it and mix then add gelatin mixture and vanilla into it and beat it using an electric mixer for 2 minutes.

  17. Get cream cheese out of the fridge and add icing sugar into it and mix.

  18. Put whipping cream mixture into the cream cheese and fold it using a spatula( don't beat it using a electric mixer)

  19. Get cheese cake tray out of the fridge and put cheese cake mixture into it, then put this into the fridge for about 6 hours.

  20. Decorate your cheese cake with some fresh strawberries and some jam.

  21. Enjoy the great taste
